COURSE DESCRIPTION

This Covid 19 situation has transformed the restaurant business.  It has changed your customers eating & drinking habits. During social distancing, your customers have become experts in sourcing food and wine for deliveries to their homes. In many cases, they have ordered wines from the same suppliers as you. With mobile technology and online sales, they have accelerated their wine knowledge: They know what is available on the market and how much it costs.  If you have noticed a relative drop in wine sales vs food sales in your restaurant lately, it is something you want to address soon:  During this 3h-hour workshop you will learn how to run an internal audit of your wine program following a thorough process; you will identify areas of improvement and develop a strategy and tactics to reach your goals.

PRE-REQUISITES

Must be able to use basic functions of Excel and understand English

OBJECTIVE

By the end of this workshop, you will have: 
1.  run a thorough audit of your wine program,
2.  identified areas of improvement, going home

3.  knowing exactly what to do to reach your goals.


YOUR INSTRUCTOR

Christophe Mercier, DipWSET, MBA. 

Born and raised in France, Chris has worked in 5-star hotels and Michelin Restaurants in the UK, US, Bermuda, Canada. In Thailand for the last 15 years, Chris was the sommelier for Six Senses & Spa Samui and has taught Food and Beverage Management at Bachelor and Master’s levels at SUIC, MUIC, BU, DTC, Le Cordon Bleu and l'Académie Internationale des Vins en Alsace.  He is now the founder of Wine & Spirit IQ an approved provider of the Wine and Spirit Education Trust and the Wine Scholar Guild.
